150g lean beef steak
½ cup Broccoli
½ cup silverbeet, chopped
½ cup sweet potato, chopped into roasting pieces
½ cup pumpkin, chopped into roasting pieces
- Preheat oven to 180°C.
- Place pumpkin and sweet potato into a roasting dish and spray lightly with olive oil.
- Bake for one hour or until vegetables are cooked through.
- In the last 20 minutes of roasting, steam the green vegetables for 5 minutes, and cook the steak to taste.
- Rest steak for 5 minutes before serving with greens and roast vegetables.
