150g lean beef steak

½ cup Broccoli

½ cup silverbeet, chopped

½ cup sweet potato, chopped into roasting pieces

½ cup pumpkin, chopped into roasting pieces

  1. Preheat oven to 180°C.
  2. Place pumpkin and sweet potato into a roasting dish and spray lightly with olive oil.
  3. Bake for one hour or until vegetables are cooked through.
  4. In the last 20 minutes of roasting, steam the green vegetables for 5 minutes, and cook the steak to taste.
  5. Rest steak for 5 minutes before serving with greens and roast vegetables.
