Makes 16 balls

1 cup organic desiccated coconut
½ cup almond meal
½ tsp vanilla essence
Zest of half a lemon
Juice of a whole lemon
2 tbsp raw honey
2 tbsp Chia, soaked in 3 tbsp water for 10 minutes

  1. Place all ingredients in a bowl and mix well.
  2. Roll into balls and coat in extra coconut.

Keeps refrigerated for up to a week.
