Serves 2

4 Organic Free Range Eggs
4 Rashers Shortcut Bacon
2 Tomatoes Thickly Sliced
3 Cups mixed Baby Spinach, Zucchini, Mushrooms and Asparagus

  1. Steam vegetables lightly (up to 5 minutes).
  2. While vegetables are steaming, fry Eggs, Bacon and Tomatoes in a non-stick frypan until eggs are cooked to taste.

Serve immediately; add cracked pepper and tomato sauce if desired
