5 Organic Free Range Eggs
1 tin Corn Kernels, drained and rinsed
1 onion, finely diced
1 Zucchini, grated
2 medium Carrots, grated
1 Cup Self Raising Wholemeal Flour
Sea Salt and Black Pepper
100g Tasty Cheese, grated
Heat oven to 180°C.
Line a round casserole dish or cake tin with baking paper.
In a large bowl, combine all ingredients, leaving ¼ of the cheese for topping. Mix well.
Pour into lined baking dish and top with cheese.
Bake for 40 minutes or until cooked through and golden brown on top.
