Makes 4 main servings or 8 snack servings

5 Organic Free Range Eggs
1 tin Corn Kernels, drained and rinsed
1 onion, finely diced
1 Zucchini, grated
2 medium Carrots, grated
1 Cup Self Raising Wholemeal Flour
Sea Salt and Black Pepper
100g Tasty Cheese, grated

  1. Heat oven to 180°C.
  2. Line a round casserole dish or cake tin with baking paper.
    In a large bowl, combine all ingredients, leaving ¼ of the cheese for topping. Mix well.
  3. Pour into lined baking dish and top with cheese.
  4. Bake for 40 minutes or until cooked through and golden brown on top.

Keeps refrigerated for 4 days or freezes well.
