Makes 4 main servings or 8 snack servings

5 Organic Free Range Eggs
1 tin Corn Kernels, drained and rinsed
1 onion, finely diced
1 Zucchini, grated
2 medium Carrots, grated
1 Cup Self Raising Wholemeal Flour
Sea Salt and Black Pepper
100g Tasty Cheese, grated
- Heat oven to 180°C.
- Line a round casserole dish or cake tin with baking paper.
In a large bowl, combine all ingredients, leaving ¼ of the cheese for topping. Mix well. - Pour into lined baking dish and top with cheese.
- Bake for 40 minutes or until cooked through and golden brown on top.
Keeps refrigerated for 4 days or freezes well.
