Makes 6 servings

chia pudding

½ Cup Raw Cashews, soaked for 30 mins
500mL Water
½ tsp Vanilla Essence
½ tsp Mixed Spice
2 tbsp Raw Honey
1 cup Chia Seeds
1/2 cup Dried Apricots
Pinch of Sea Salt

  1. Soak cashews for 30 minutes or longer, then discard the water and add the cashews to a blender with 500ml fresh water. Blend on high for 30 seconds.
  2. Pour cashew milk into a medium bowl and add vanilla, mixed spice, chia, apricots and salt.
  3. Allow to stand for 10 minutes while the chia absorbs the cashew milk.
  4. Add honey to taste and stir through well.
  5. Serve with one piece of fruit, chopped. Keeps refrigerated for 4 days.
